Employees collect sheets of matzo from a conveyor belt oven and break them down for cooling on racks at Streit's Matzo factory in the Lower East Side neighborhood of New York, NY on Jan. 15, 2014. The matzo is baked at a temperature of 800 degrees. The factory was producing matzo kosher for Passover, which it does for six months of the year.
