Employees mix 80 pounds of flour and 30 pounds of water in each mixing bowl in order to make dough for matzo at Streit's Matzo factory in the Lower East Side neighborhood of New York, NY on Jan. 15, 2014. The factory was producing matzo kosher for Passover, which it does for six months of the year.
